San Michali of Syros P.D.O. A hard, yellow cheese made from pasteurized cow’s milk, produced on the island of Syros with Protected Designation of Origin (P.D.O.) status. Its color is golden yellow, its texture compact with irregular holes, and when cut it crumbles in a way similar to parmesan.
