Pastourma ?
Pastourma is essentially a cured meat with a long history, popular across Central and Western Asia. It is a naturally air-dried charcuterie noted for its special coating – a spiced paste (called tsimeni) made from a blend of spices that gives pastourma its distinctive flavor.

Pastourma is traditionally made from beef, though it can also be made from other meats such as lamb, camel, pork, goat, or buffalo. The most prized variety is often considered to be pastourma made from camel rib meat, due to its exceptional quality.
To prepare pastourma, the meat is first salted heavily and pressed to dehydrate it. It is typically pressed between wooden boards that are tightened progressively, squeezing out all moisture from the meat. In the final stage, the cured meat is coated on the outside with a layer of spice paste (tsimeni) and hung up to dry in open air and sunlight for about 12–15 days.
Through this natural drying process, the meat develops a deep dark-red color and an intense flavor.
