Skotyri Cheese from Ios. A soft white cheese created by the “marriage” of two other cheeses: the local Kefalotyri and Mizithra. Kefalotyri is mainly made from whole goat and sheep milk (and more recently also cow’s milk), while Mizithra is a whey cheese from the same milks. Aromatically, thyme dominates, while the taste is spicy, rich, persistent, and slightly tangy, with thyme leaving a distinct aftertaste.
