Product Description:
Parcharotyri “Rayan.” Parchar in the Pontic dialect means high mountains. This cheese was traditionally made during the summer months when people moved to high pastures. Parcharotyri is made from fresh, semi-skimmed cow’s milk and veal rennet. Smoked with aromatic herbs, which subtly define its flavor. Aged for at least 1 year. The Rayan company aims to preserve the treasure of Pontic recipes as a living legacy for future generations.
