Batzos Cheese from Sochos. Batzos is a traditional brine cheese, semi-hard to hard, white to off-white, without rind, with irregular holes throughout its body. Made from sheep and goat milk, it has a pleasant tangy, slightly spicy, and very salty taste. It is consumed fried in a pan or on the grill, grated over pasta, in salads and dishes, or fried with eggs. One of the oldest Greek cheeses, it was traditionally produced by shepherds in mountain huts.
