Manoura Cheese from Sifnos Aged in Wine Lees. A wine cheese made from goat and sheep milk, hard, very low in moisture, with a sharp, spicy flavor, distinct aroma, and its characteristic dark reddish-brown edible rind. After maturing, Manoura from Sifnos is immersed in wine lees and then placed in jars for further aging. The aromas of the wine lees penetrate the body of the cheese, creating a unique wine cheese with a sharp, spicy flavor, distinct aroma, and edible black rind.
