Volaki Cheese from Andros. A trademark of Andros and Tinos, Volaki (or Kefalaki) is a cheese with a long tradition. It takes its name from its shape, molded into a round, pear-like form. Made from cow’s milk. When fresh, it is used like feta in the rest of Greece, while when dried and matured it becomes Melichloro, with a flavor reminiscent of spicy Kefalotyri.
