Italian Pecorino with Chili – Pepato al Peperoncino. In southern Italy, it is traditional to add black pepper or chili flakes to Pecorino. The result is called Pecorino Pepato, meaning “Peppered Pecorino.” This is a hard cheese made exclusively from sheep milk, crumbly in texture, salty with a spicy taste and a light aftertaste of nuts, mainly walnut. It matures for at least 6 months in special cellars along with chili, which gives it its distinctive spiciness.
