Product Description:
Italian Pecorino with Wine. Made from fresh sheep’s milk, produced only during the red wine season, and aged 40–45 days in grape must (from mid-October to early December). Once ready, it is removed from the wine lees, dried, and then aged for an additional 3 months. Pale interior, somewhat soft texture, and very intense red wine aroma. Distinctive, salty flavor with the unmistakable character of fine wine.
