Occelli Cheese from Italy with Whisky. A rare Italian cheese with barley malt and whisky! Occelli with barley malt and whisky is made from mixed cow–sheep or cow–goat milk, depending on availability per season. It matures in unique underground rooms under ideal conditions in the Pamparato region for about 3 months and is then immersed in wooden barrels with malt whisky and barley grains. It remains in the barrels for at least another 3 to 5 months until it acquires the desired sharpness, aroma, and color.
