Beppino Occelli creates cheese in the Lange region, where alpine pastures provide rich food for local cows, goats, and sheep. Known as formaggio ubriaco or “drunken cheese,” this specialty from Piedmont ages in traditional wooden barrels containing the skins from Barolo wine. The marinade leaves a purple stain that gradually penetrates the rind of the cheese, imparting a very distinctive wine-barrel flavor. The flavors of the cheese and grapes blend together to create a taste that is creamy, sweet, wine-infused, buttery, and sharp at the same time.
