Monte 27 Cheese from Italy, 12 Months Aged. Monte 27 is made with pasteurized cow’s milk and has a dark brown rind and a more or less deep yellow paste depending on the season of production. Its texture is compact, without holes, ideal for breaking into flakes or grating. On the nose and palate, it offers aromas of milk, hay, grass, meat broth, as well as vegetal, toasted, and spicy notes. The taste is a perfect balance between sweet, salty, and sour.
