Product Description:
Blue Cheese from Ithaca “Eumaios.” A spreadable, aromatic blue cheese. “Eumaios” requires “strong milk,” so it is made with the first milk of February and spring. The two-month aging is not done in caves (as with Tsemperis) but in a special chamber, where temperature, humidity, and all factors contributing to the cheese’s development are carefully controlled.
