Kopanisti from Mykonos. A traditional spicy cheese with a strong, peppery flavor, bold and intense. Somewhat reminiscent of French Roquefort, Alsatian Munster-Géromé, and other blue cheeses, yet unique – unshaped, spreadable, with a characteristic off-white to pale pink color that darkens as it matures.
